Do I have to agree to be recorded?
In short: For a documented break or an inspection, yes: the recording is the service, and the engagement letter says so in plain words. Anyone else present is told before recording starts and can stand out of frame.
A documented break without video is just an opening, so consent to recording and photography comes with engaging the service. You see that in writing before you sign.
Shop staff, customers or anyone else at a break are told before the camera starts, and anyone who prefers not to appear can stand out of frame.
